In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl or jug, whisk the milk, eggs, vanilla extract, and melted butter until well combined.
Gradually pour the wet ingredients into the dry ingredients while whisking. Mix until just combined, don't over mix, as that can make the pancakes dense.
Place a non-stick frying pan over medium heat and lightly grease it with butter.
Pour a ladleful of batter into the pan. Cook for about 2 minutes until bubbles form on the surface and the edges look set. Flip and cook for another 1–2 minutes until golden brown.
